No Bake Chocolate Chip Cookies
 

Time: 15 minutes plus an hour or so to cool
 
Ingredients:
2 cups sugar,1/3 cup cocoa powder,1/2 cup milk,1 stick of butter or margarine,1/2 cup peanut butter,
1 teaspoon vanilla extract,3 cups quick-cooking oats, 1/2 cup chocolate chips
 
Directions:
Simmer butter, sugar, cocoa, and milk over low heat until butter is completely melted.
Remove from heat and stir in oats, peanut butter, chocolate chips and vanilla. Drop spoonfuls onto a greased cookie sheet or wax paper and let cool completely. Putting them into the refrigerator cuts down on cooling time. You can also spread the mixture out over the pan and when cool, cut into squares like rice crispy treats.


Stewed Apples

Ingredients:
2 apples, 1 cup water, 2 tablespoons sugar, saucepan

Directions:
Peel and core the apples. Chop the apples into small pieces. Put the chopped apples, sugar and water in the saucepan. Cook until apples are soft. Then serve with ice-cream. Yummy, Yummy!!!


Honeycomb

Ingredients:
2 teaspoons golden syrup, 1 teaspoon water, 4 tablespoons of water, 1 teaspoon of bicarbonate of soda, saucepan

Directions:
To the saucepan, add sugar, water and golden syrup. Boil this for about 8 minutes. Remove from the heat and add the bicarbonate soda. Pour this into a greased dish. The mixture will rise so do not be alarmed. Do not move the dish while the honeycomb settles. Eat when cold
.


Jam Tarts

Ingredients:
Apricot Jam, water, pinch salt, 50g butter, 100g flour, muffin tin, bowl, rolling pin, board, cookie cutter

Directions:
Pre-heat the oven to 180c. Grease the muffin tin. Sieve the flour and salt together in a bowl. Rub the butter   no the mixture. Gradually add water to make a soft dough. Flour the board. Roll dough on board about 1/2cm thick. Cut into circles using a cookie cutter. Place pastry in muffin tin. Add the jam but not too much. Bake for 15minutes until cooked. Cool then eat. If their is extra dough left, roll and cut into thin strips. Place these over the jam and make a pattern.


Cheese Scones

Ingredients: 
2 cups of self raising flour, 1 cup of milk, 1 egg yolk, 2 tablespoons of milk, 1/2 cup of grated cheese, 2 tablespoons of butter, extra flour for rolling, Cookie sheet, bowl, blunt knife, board, cookie cutter (optional), baking brush

Directions:
Pre-heat oven to 200c. Add flour to bowl, Rub butter into flour using fingers. Add cheese. Add milk and mix quickly using a blunt knife until moist dough is formed. Put onto flour board. Knead lightly. Press out scone mix with cookie cutter or form into small balls then flatten top slightly. Place on a greased cookie sheet. Beat egg yolk and 2 tablespoons of milk together. Brush scones lightly  with egg yolk and milk mixture. Bake for 10-15 minutes. Serve hot or cold. Cut in half and spread with butter. 


Cheesy Balls

This recipe works well with kids because all ingredients go into the food processor, and then the child can "roll up" the cheesy balls just like playing with clay. 

Ingredients:
3 cups Cheddar cheese, grated, 1/2 cup margarine or butter (1 stick), 1/2 tsp. salt, 1 tsp. paprika,1 cup of flour 

Directions:
Preheat oven to 400 degrees. Place cheese in the work bowl of the food processor. Place metal chopping blade in work bowl and add the margarine or butter. Combine salt, paprika, and flour in separate bowl. Turn on food processor, and slowly add the flour mixture through the feed tube. As soon as all the ingredients are combine, stop. Get the kids to take one teaspoon of the mixture and make a small cheesy ball. Make sure the kids hands are washed. They can roll the mixture between the palms of their hands to make the ball. Line up the cheesy balls on an ungreased cookie sheet. Bake in the oven for about 15 minutes or until golden brown. 
This recipe make about 24 cheesy balls.


Peanut Butter Cookie

Ingredients:

1 cup sugar, 1 cup white corn syrup, 1 1/2 cups peanut butter, 4 cups cornflakes

Directions:
Combine sugar and corn syrup and bring to a boil just so that the sugar dissolves. Add peanut butter and stir until it is smooth.
Stir in the cornflakes. Line a flat baking pan with wax paper. Drop the cookie mixture by teaspoon while still warm.
You can once batter is a little cool. (Get the kids to shape the cookies)


Baked Carrots

Ingredients:
brown sugar, 4 peeled sliced carrots or whole, 2 tablespoons butter

Directions:
Place carrots in a lined baking sheet. Melt the butter on stove top or microwave and add to carrots. Allow your children to sprinkle the carrots with brown sugar. Cover the baking sheet with foil and bake for about 30minutes at 350 degrees. Oven temperatures can vary so check that carrots do not burn.
